Ergothioneine (EGT) is chemically a unique, naturally occurring sulfur‑containing histidine derivative. It is mainly synthesized by certain fungi (e.g., edible mushrooms), actinomycetes, cyanobacteria, and some yeasts. Higher plants, animals, and humans cannot synthesize ergothioneine and must obtain it through the diet. Therefore, it is also considered a potential "vitamin" or an important dietary micronutrient. With its strong antioxidant and anti‑inflammatory properties, its application value in cosmetics, food, and biomedical fields is steadily increasing.
